We had a chat with the master of cake artistry Mavournee Georgeson to talk all things decoration and deliciousness about… you guessed it, CAKES.

How did you get into cake making?

8 years ago I started an evening community college cake decorating course as a hobby and shortly after began work experience with Faye Cahill Cake Design. Work experience turned into part time and then full time work in the studio. Faye took me under her wing and taught me everything! I am so grateful for the experience, as Faye is one of the original Sydney cake beauties and is a true artist. 

 

What different types of events could your cakes cater for?

I create lots of wedding cakes but can cater for any type of event. I love them all! 

How are your cakes different to others on the market?

There are so many beautiful cake designers out there right now, and I'm not sure if I'm very different, but I try to keep within my own style and let the designs unfold naturally. 

My cakes are baked from scratch with whole and mostly organic ingredients. I handle the cake process from start to finish and take a limited number of cakes each week to ensure I can spend adequate time on each. 

Which of your cakes is most popular at the moment?

People are loving any type of soft finish with seasonal fresh flowers. The relaxed, understated look is really popular and sits nicely in northern beaches venues. The semi naked cake style is heavily requested, which I love too. 

My most popular flavour is by far the buttery coconut cake, it can be paired with most types of fillings and is an all-round winner! Second to that would be the rich dark chocolate mud cake. 

What is your favourite part of making the cakes?

I love baking and pulling perfectly risen cakes out of the oven, but I have always loved arranging flowers on the cake. Sugar, wafer, fresh or edible; I go into a relaxing zone during this final decorating stage.

Why do you think it is important to have a cake at any celebration?

Cake is a wonderful celebration tradition and beautiful centrepiece... also it is delicious and makes everyone happy ;)

If, in particular, wedding couples aren't cake people I would still suggest ordering a cake, even a small single tier for the cutting tradition. I never push a bigger size cake than is needed for the numbers and I encourage people to consider the style of party, other food served, event timing and the type of guests attending. Leftover cake can always be taken home by family, divided into portions and frozen or served the following day at brunch.  

Is there anything else you would like to tell anyone who is considering purchasing from you? 

I am passionate about creating beautiful cakes, and want to make the process as easy as possible for my people. The cake rules are not as traditional anymore, so choose something fun and delicious that you love. My cakes are custom baked so if you have a favourite flavour or any special requests please ask. x
